Few cakes are 100% organic, largely because it’s hard to find organic superfine sugar. However, Macrina Bakery, with several Seattle locations, creates many of their baked goods using Northwest apples, potatoes, cranberries and hazelnuts as well as wheat, rye, barley and buckwheat flour.
